My daughter has Celiac Disease. I work at a college that labels food ingredients and has a fridge of gluten-free safe foods; I think this is what most colleges do.
My real fear for her is cross-contamination.
I live in Northampton and know that Smith has a completely gluten-free dining room for students with celiac and the the food is prepared separately with close attention to cross-contamination.
She’s applied to: Barnard, Wellesley, Scripps, University of San Francisco, Northeastern, Smith, and Mount Holyoke. Is anyone first-hand familiar with any of these colleges and their allergen protocols?

Each school will have a director of dining - and I would reach out to them directly.
You might also broaden your search and look at schools known for this (if you find out those won’t work).

My daughter has celiac and a tree nut allergy. I would recommend looking at he housing options at the colleges she is interested in and the required meal plans. My daughter’s college had gluten free options but it got very repetitive. Luckily freshman didn’t have to have the full meal plan as she had to buy groceries to supplement what she could get in the cafeteria. After freshman year she moved into an on campus apartment and wasn’t required to get the meal plan. She was able to eat much healthier and more safely and it was cheaper than the dining plans. If on campus apartments aren’t available, look for dorm with kitchens so she could at least sometimes cook her own food.
My neighbors son has severe celiac disease. He has been happy with Sunny Geneseo’s food. They have a lovely dining hall.
