Extenuating circumstances?

I really need some advice on how to go about applying.

For freshman and sophomore years, my gpa in high school was about a 3.26 UW and a 4.2 W.
However, during junior year i had a moderately severe health problem that required be to miss a total of 42 days during the school year, due to multiple surgeries. Dealing with this, SATs, and school was really difficult.

Although, I did get a superscore of 2180 on my SATs (Even though I took it two days after a surgery, surviving on pain killers. Yikes!)

Anyway, so my junior year, but gpa ended up being a 2.8 UW/3.8 UW.

Overall now, my gpa stands at a 3.1 UW/4.0 W

I started in freshman year with only one honors class, but my transcript shows an upward trend, meaning I attained another by sophomore, and an AP by junior, and now, in senior year I have managed to be placed into 3 AP classes! (French, Gov, and Lang Comp)

I am confident in my recommendation letters, because my teachers understood about the condition I had to go through; also my guidance counselor said he would send in something about how sick I was.

I have a lot of ECs and have a leadership position in French Honors Society, and countless volunteer hours (So I am confident about that as well.)

I do believe I can write a really good essay, English being my one strong subject: suppose my essay can be an 8 or 9/10.

I guess me question is, do you think that this at all can compensate for my terrible junior year gpa? should I include something about this in my Essay?

I want to go to NYU CAS so much, I was going to apply ED. Am I wasting my ED here? Since they do not defer me, should I just apply regular? Will ED help my chances? I am not sure what to do, because if it is a waste, I may apply to another school ED instead (John Hopkins, another one of my dreams) because I heard that ED there, helps A LOT.

What are my chances for these two colleges? How can I go about this? (I have back up schools as well, don't worry!) Can I also have some suggestions of colleges that give a lot of weight to SAT over GPA? or maybe Essays over GPAs?

fhsdflhslfssfhugslf stress..

Bumpppppp pls
