Foreign Language Admissions Role

I was wondering if anyone could possibly provide some insight into my situation. I began taking French in Grade 7 (French I), and I increased year by year until sophomore year (French IV). As a current junior, fitting AP French V into my schedule wasn't optimal in retaining the other classes I wanted to take. So, this year I didn't take French V. I was wondering how this would influence acceptance chances at schools that "Recommend" 3+ years of a foreign language. The main schools I am looking at are Stanford, Berkeley, UCLA, USC, and Cornell. As for my grades and SAT scores, I do believe they are on par with or above the average at these schools. This year, my schedule carries 6 AP's (8 classes per year), so I am wondering if the 2 vs. 3 years makes much of a difference. Also, would it be a good idea to take French V in senior year? (I stopped taking French both because of the scheduling dilemma and the fact that it wasn't appealing to my interests)

French IV Course Grade ~96-97%

The UCs use the level completed of foreign language, so completing French 4 in high school is considered equivalent to completing 4 years of high school French. It would be surprising if other schools did not do something similar, but you can always call the admissions department if you are not sure. (Of course, level 5 looks better than level 4 in terms of high school schedule rigor, but if level 5 would displace other rigorous courses in your schedule, then there may not be an obvious answer.)
