Zoology or Biology.
Economics would be a good minor. Many environmental jobs focus on policy/environmental impact along with economic impact of these policies. Having a business related minor might open up more job opportunities.
Econ! Learning about market dynamics could open your eyes to environmental business opportunities. I know that sounds antithetical, but you could put positive environmental practices to work on a large scale by marketing to people’s changing perceptions.
(If that appeals to you, also at least take Accounting, Business Law, Marketing and Finance classes. You have to know how to account for revenue, expenses, liabilities, equity and cash flows; how to raise capital and manage equity and debt; how to sell and deliver your product or idea; and the legal aspects of operating a business.)
