Graduate early - take gap year?

So I have enough credits that I'm already at Junior standing and could comfortably graduate early if I wished. I was already planning on graduating a semester early but after talking to my advisor I found I could graduate a whole year early.

If I did graduate a whole year early:
I would still apply when I should be applying, ie a year after graduation. I would intern/volunteer at a nonprofit organization.

If I stayed for an extra semester:
I would do an honors thesis in anthropology. An honors thesis would be fun but I'm not all that interested in research. And to do that honors thesis, I would be able to have an anthro major instead of anthro minor.

What are the benefits of an honors thesis? Will it matter if I have a bio major and anthro minor or a double major in bio and anthro? Are there any reasons I'm overlooking that graduating early would be a bad bad idea?

should be fine; it probably would be a plus that you get to do a year of intern/volunteer at nonprofit in your gap year
