I’d recommend you contact the international student office at your university and ask for their advice. Generally speaking, you have the following options:

Apply for the visa at an embassy in another country. Generally discouraged but you do have a good reason. (Try to get in writing that you cannot get an earlier appointment in Egypt.)

Get a different I-20 from your college that states a later reporting date. You must enter the country by the reporting date on your I-20 or else you’ll be turned away at the port of entry. (The reporting date is usually a few days before the beginning of classes.) That would allow you to enter the country late, but you’d still miss classes…

If your college teaches classes online, you might be able to take a full course load of online classes in your first term from the comfort of your own home, and then report to campus in the spring.

Start college later. It’s not actually all that uncommon that students need to postpone their start date by 1-2 semesters because of visa troubles. If you decide to defer enrollment, do be sure to check if it would make sense for you to start in the spring. It could happen that all of the courses for your major are taught as year-long sequences, and you might only be able to take general education classes in the spring term.

Update today on the State Dept’s Facebook page. Sounds like there’s still going to be a wait.

U.S. Department of State: Consular Affairs

The Department of State Bureau of Consular Affairs continues to make progress restoring our nonimmigrant visa system to full functionality. Over the weekend, the Department of State implemented system changes aimed at optimizing performance and addressing the challenges we have faced. We are now testing our system capacity to ensure stability. Processing of immigrant visas cases, including adoptions, remains a high priority. Some Embassies and Consulates may temporarily limit or reschedule nonimmigrant visa interview appointments until more system resources become available to process these new applications. We sincerely regret the inconvenience to travelers, and are committed to resolving the problem as soon as possible. Additional updates will be posted to travel.state.gov as more information becomes available.
