When applying as a transfer student during Freshman year, do they care about what you did in high school. As in extracurriculars and volunteering? Should I even include that information into my application? Please help!

Definitely. Applying during freshman year means that the transfer colleges will only have 1 semester worth of college info to look at. They will want to see what you did in high school. The Common Application has room for your ECs from Junior year of high school on up. You might not include every little thing you did in high school but definitely point out your major activities.
