High School Senior Courses?

So I'm a junior and that time for course selection is coming around soon.
I originally planned my whole high school courses to get challenging every year, but this year I had several schedule mishaps.

so next year i plan to take:
AP Gov
AP Lit
Physics Honors
AB Calc
AP Art 2D Studio (takes up 2 electives)
Sculpture 1

The thing is, Sculpture is my RISD connection. Is a rec so important that it's worth taking a course for? I had her in freshman year but she told me she's not allowed to write recs if I had her that long ago. Is that true?

Because otherwise, I wanted to replace Sculpture 1 with a more challenging course, such as AP Comp. Sci or Latin 4.

The thing is, I only took 2 years of Latin. I was recommended to skip Latin 2 and go to 3, but due to a schedule mishap, I remain in Latin 2 this year.

Here's the thing. I have 2 random Korean language credits come up on my transcript. I have no idea where they came from, but I've asked my GD a few times and she just bluntly says, "Yep, you got those credits."

I'm concerned because 3 language credits is required for a high school diploma. I currently have 4 with the random Korean credits, but only 2 without them. Therefore, I was thinking of doing another year of Latin to be cautious.

So what's better to colleges? 5 Language credits (or perhaps 3 if those Korean credits prove to be false), a RISD recommendation, or another challenging AP course?

Props if you read all this, and major thanks, because obviously I'm pretty lost.
