I keep hearing that grad schools mostly care about experience.

I'm transferring to IUB for the fall hopefully.

Would I be able to secure a research position if I just talked to a professor or someone in the biology department?

You may need to make a list of professors to talk to, labs do fill up (at least at my school) so it is likely you would not get your first choice of someone to do research under.

I’m deciding between neuro and bio now not sure.

So is this like a catch 22? Sort of like trying to get jobs that require experience/internships, but in order to get experience/internships, you need experience.

I wouldn’t say catch 22 at the undergrad level, as profs will know that you aren’t likely to have research experience, and it is very doable to get into an academic lab if you put some effort in to finding them at your school. I think the catch 22 you are referring to would be more common trying to get into some industrial lab without any experience.
