I think some of the courses overlap, but I was just wondering if anyone had any input on double majoring in these two majors.

Assuming no AP credit…
Economics requires 50 units of courses (assuming taking STAT C8 and 88 for the statistics requirement). If you chose the more math-heavy path, add another 4 units for MATH 53.
Data science requires 38-46 units of courses that do not overlap with the economics major (MATH 1A, 1B; STAT C8, 88, 0-8 units of overlapping upper division courses).
You will also need 8 units of reading and composition courses, and probably 4-5 courses of the 7-course breadth requirement for 16-20 units.
So all of this adds up to 112 to 124 units, so you would need to choose carefully to make sure that each course fulfills some requirement, unless you want to overload and take substantially more than 120 units in 8 semesters (note the 130 unit ceiling in L&S if you take more than 8 semesters).
If you have AP calculus or AP English credit, that may help fulfill some of the requirements.
