Specifically William and Mary. I am very interested in attending the school, but between school and personal issues, I have not been able to find a time to travel to College of William and Mary. Would it be ok to call admissions and ask how important is "interest" to the admissions process?

Don’t call. Check their “Common Data Set”. Google it. Then look under “demonstrated interest” and see if it has any bearing.

Specifically, you’ll want to look at Section C7 of the Common Data Set, about applicants for freshman admission.
