I'm a freshman and this is what I came up with... Overall 8 AP classes
Sophomore:
AP European History

Junior:
AP Calculus BC
AP Chemistry
AP US History

Senior:
AP Spanish Language
AP English Literature
AP Statistics
AP Physics C

Other AP's my school offers include:
AP Art History
AP Calculus AB
AP Environmental Science
AP Biology
AP Spanish Literature
AP Latin: Vergil

I also am taking Multi-variable calculus Honors in senior year. I want to major in engineering or business/ business related major. Is there another AP I should take or is this enough? or should I switch an AP class for one that I did not pick?

You’re fine. If you have room during your Junior or Senior year, I do recommend that you take Biology or even Art History (5 AP classes Senior year should be good). Environmental Science is generally not as rigorous as other courses but it is surprisingly related to Economics so you might want to self-study that.

There is no set amount, but what you have on your schedule sounds fine.
Most importantly, however, take APs that interest you, and relate to what you might want to study later. College’s don’t expect you to take all the APs in your school, and you’re planning on taking 8/14 of them, which is fine. AP Bio’s always a good one to take, but for engineering, I’d assume physics and calc are more important.
