I’m interested in a few extracurriculars at the college I’m going to in the fall, but find myself having to choose between the ones I’m interested in. Assuming I have a full time schedule and am studying, say, 4 hours a week for each class, and am working ~10 hours a week, how many extracurriculars do you think I could take and still be sane/get a decent amount of sleep?

You can try to do everything in the beginning, and then narrow your focus once you have a better understanding of what you can handle.
I would say two clubs / activities with decent to serious involvement would be a good guess, but some could do 3 or 4 right off the bat.
It depends on how involved you want to be with each club.
Based on my experience, it’s doable to be deeply involved with only a couple of clubs (especially if you are working). By deeply involved, I mean dedicating 5+ hours each week.
If you are slightly less involved in each club (2-4 hours a week) 3-4 EC’s are doable. This route would be harder to coordinate (some club activities could conflict), but still doable.
I agree with the aforementioned suggestion of trying all the activities you are interested in, at least at first. Don’t narrow down just yet - you may find that the one club you chose isn’t very active, or that two of them tend to meet at the same time, that the one you were only marginally interested in is actually the coolest activity, etc. Try as many as you can at narrow down then.
One, maybe two. I made a huge mistake my freshman year trying to do 4.
Another way to go is to start with one, and then add as you know you can handle the workload.
