How do I avoid coming off as a math/science student if our school offers only science AP electives? We don't have psychology/economics/latin/etc. Basically no literature/social sci classes that I would take if they had them, and would follow my interests. If I take a lot of sciences, would it make colleges think I was a science person? My ECs reflect my interests--would that help or confuse? Should I self study courses I like?

write in your essays about how much you like humanities (but don't be apologetic about your class selections)

and/or take a class at a community college/nearby state school

Your humanities-focused (assuming) EC's should help "define" who you are. It's not your fault that your school doesn't offer those AP classes. So, I would agree with fizix2 about taking classes at community college/university. You could also earn credit through independent study at school and/or self-studying those subjects.

Like the others said, you could take classes in the humanities at your local community college and also do summer programs and other types of enriching activities in the subject of humanities. Also, you could self-study APs.
