To employers or anybody reviewing an application of mine in the future, would it make any difference if I had a minor/BA in Spanish as opposed to if I didn't take any Spanish classes but had already become fluent in the language and simply listed that I could speak Spanish as well as English? My schedule is quite full already and there isn't much room for Spanish so I'm trying to see if its worth it or not take any classes, otherwise I can learn on my own time.

I think, honestly, knowing the language is what counts. I know here in CA it’s quite marketable. I also think it sounds pretty nice to say you know a subject in depth (or well, a language, whatever) WITHOUT the formal education. It’s a little bit like, “oh I majored math, but I studied art history on the side.” You’re basically saying, hey, I have a useful, intellectual hobby because I’m a well rounded person.

I wish I knew a language that was that useful. I sort of doubt any employer will really care about my Hebrew/sign language. Ha.
