I've been back and forth between majoring in International Business and Early Childhood Education, and then also double majoring in Creative Writing with one of the those. I thought I still had time to make this decision while in my first year or two of college, but apparently, I do not.

My top two (realistic) school choices don't offer both majors. UNF offers International Business, but only a minor in Early Child Education, while UF has Early Childhood Education and no International Business at all.

Which of the two majors is more practical an would be more beneficial in the long run?

^You should check out USC in Columbia. #1 in international business and it offers early childhood education as a major (as well as pretty much every other teaching certification out there).

In my opinion, it really depends on what you want to do. If you want to do business, then do business. If you want to teach, then teach. Business is probably the more useful degree, but if your goal is to teach in elementary school, then it won’t get you there. You’d need to get a teaching degree (or some alternate form of teaching certification). On the flip side, you don’t actually have to have a business degree to work in business, although it is useful.
