Does anybody know the percent of students who complete an intern by the time they graduate? If possible, could you include a website, or where you found the information.

Its going to vary with your field of study.
CSE (engineering) students have their own job fair at U of M and internships are in demand for most majors. I would say about 50% intern at some point, but thats just my guess from talking with the placement office.
For CLA thats going to be lower and for some majors much lower. If you are an admitted student you can view open positions via GoldPass https://goldpass.umn.edu/. For some majors its more common to do an unpaid internship or volunteer for something related to your field.
