I'm not a math person at all. I even struggled in Algebra 1. But, I'm far from a "dumb" student...my current GPA is a 3.8 in my senior year (I just avoid math courses lol).

My question is...will an Elementary Applied Statistics class be difficult if I'm bad at math? I've heard it is a totally different concept.

Here’s a comment often repeated “Statistics is common sense”. Because it basically is. Unless you are completely innumerate or math phobic, elementary statistics should be doable.
