I see lots of people take 8 or 9 APs and get 5s on all of them on cc; I was just wondering, is it a huge deciding factor in admissions or they are just trying to get college credit? Is it okay if I only take 1 AP but ace it?

You are right in the fact that people taking so many APs is too improve their college apps. In elite schools like the Ivy League, it has become the standard to take multiple AP’s, as this is the “most rigourous” course load that admission officers look for. I don’t think the majority of students take AP’s for credit, or to get ahead. As a freshman in college, I know plenty of people, who despite taking AP Calc and Chem, take those same classes again to boost thier GPA.
