I'm currently taking APWH but I'm thinking about becoming a nurse which doesn't require a world history credit. Is it wise to just not take the AP World History test if I'm not going to be able to use the credit anyways? Will colleges really care?

no they will not care

Every degree requires distribution requirements - even if you want to get a nursing degree, you’ll need credits in history. So I would suggest taking the AP Exam anyways, the credits will likely be useful even if they aren’t directly related to your major.
