I am beginning my senior year of high school this year and the school I go to only offers one basic physics course which is AP Physics 1. There is no other way for me to take another year since there are no nearby schools or colleges that offer any kind of physics course. I plan to major in mechanical engineering and I am going to be applying to some pretty big name schools (UC Berkeley, Caltech, Harvard, etc.). Will the fact that I only was able to take one year of physics hurt my chances of getting into any of these schools?
A year of high school physics is the typical expectation for students who will take physics in college.
One year is enough, especially when no other option for more is available.

Not sure why Harvard is in the mix. Their undergraduate engineering is several leagues away from the other two you mentioned.
Make sure you have a safety or two. All three have such low admission rates that they routinely reject fully qualified students. It is not possible to have strong enough stats that admission will be guaranteed to any of those. They all reject 4.0/2400/Valedictorians.
