Ivy League and other, Prestigious University Chances?

Currently I’m a junior attending a highly competitive public school in Texas with around 1300 students in my grade.
I’ve taken 9 AP courses and have gotten or will get 5s on all AP exams, but I’m taking 9 more senior year, so I will finish with 18 AP courses.
I’m also ranked in the top 1.5% (top 20 students) of my school and on the November 2015 SAT, I received a score of 2390.
800 - Math
800 - Writing
790 - Reading

SAT Subject Tests:
I’ve taken two SAT IIs so far. I have yet to take my junior SAT IIs as I plan to take those in June after AP exams.
World History - 800
Math Level II - 800
Anticipating 800 in US History and 750+ in Physics and Literature

Also, some information about myself:

I’m a naturalized Indian American.
I have no legacy at any of the prestigious universities for which I hope to receive feedback.
I want to major in economics or business with the goal of becoming an investment banker and transitioning to Wall Street.
(It should be apparent that a plurality of my leadership positions and many of my extracurricular activities and awards skew toward finance/economics, which demonstrates a clear focus on a specific career path from an early age. Will college admissions officers notice this and if so, will they view it in a positive light as I don’t just have a laundry list of activities but rather, I have concentrated my achievements in a particular field of interest that I intend to pursue in college?)

Admissions will notice if your essays demonstrate this “theme” of econ/business in a compelling way. You need to package yourself- don’t expect the admissions officers to do it for you. You’ll want to use the common app essay as a general introduction to your interest- maybe with a family anecdote. Then for each school that you apply to, use its specific essay(s) to show specifically how your interests fit into the program/department there. Make sure to indicate what you will contribute to campus life. You have a great record but you need to jump through all the hoops. Good luck!

What are your plans for this summer?

Also, I would refine your “Ivy, androther prestigious university” list to fit your interests. Which schools interest you in particular? I would think that Penn Huntsman would be right up your alley. Princeton, Harvard, Dartmouth, UChicago and Stanford also seem like good fits. All are intensely competitive, and you should have a range of other options, but you should be a strong applicant if you present yourself well.

Why take more SAT II tests though? You have an 800 in two of them, one math, one humanities? Is there any place that requires more than 2 for admissions consideration? Maybe there is a better use of your time and money?

Make sure you have some safety schools. And make sure those prestigious schools are affordable. Verify with your parents what they are willing/able to pay and run the NPCs to find out what your EFC might be.
