Is it better to take SATs during Junior Year and Senior Year (even though a person is not prepared at all to take it Junior Year)... Or is it better to jsut take it in October of Senior Year, and Maybe Decmeber (in whch the person will be more prepared). Do colleges care if you take the SAT junior year?

I don’t think you’re “not prepared at all” to take it during your Junior year. The SAT is a reasoning test, not an assessment of how much you’ve memorized while in school.

I took my SATs in May and June of my Junior year (school year here runs till mid June). I took my Subject Tests in the winter of my senior year. It worked out quite well, actually.

A boy who graduated from my school a couple of years ago took his first SAT test in 7th grade and took his final SAT at the very end of his junior year; he got into Stanford EA and you can trust that he was “unprepared” for his first SAT.
Unless you seriously believe that a few months will mean the difference for your score, I don’t see why you shouldn’t take it at least once during your junior year. Go for it! :)
