My Critical Reading and Writing scores are alright, but when I take practice tests, I consistently score low on the math sections. Will this destroy my chances of getting into schools such as Pitt, PSU, etc., even if I otherwise have a pretty good GPA, almost all Honors/AP classes, etc.?

Take a look at the Common Data Set for each school (google it) and check the math score ranges. If you are in the lowest 25%, know that you will have to have something pretty stellar to offset it. It’s not impossible, it’s just the definition of a reach.
