It says on the McCormick website that the EA series is equivalent to many science/math courses such as linear algebra and general physics. So, does this mean the the EA series, let's say EA-1 linear algebra for example, will replace a real linear algebra course? What if you are not ready to take linear algebra?

Don't worry about it. Based on what I read, EA-1 would have some linear algebra but it's not all about linear algebra. You will be learning more and more of that while applying it in the subsequent EAs in an integrated approach.
