More APs = higher chances of acceptance?

I’m configuring my schedule for my junior year of high school right now. Right now, as a sophomore, I am only taking one AP class, AP World History (the only one available to sophomores). Next year, I plan to take AP English Language & Composition, AP Psychology, AP Calculus AB, Physics honors, and College Sociology. I am debating right now whether or not I should take AP US history as well, or if I should just stick with the honors course. I do not really like history and find it to be boring. I want to major in psychology or neuroscience one day. It also may be too much of a stretch to take so many difficult courses at one time. So far in my sophomore year, I have not received a GPA lower than a 98. My guidance counselor says its is not my best option to take honors US history rather than APUSH because I’m not “challenging myself enough.” She thinks I should take all 4 AP courses. Should I listen to my guidance counselor or take the honors history course? Do colleges really care about how many AP classes a student takes?
