I don’t think you are going to get the kind of answer that you want for this question. There tends to be a lot of variability in acceptance rates from one year to the next in any given professor’s studio. For various reasons a particular professor may accept more or fewer students into his/her studio from year to year such as: balancing out how many grad vs. undergrad students they have, maybe someone in the studio decides to drop the performance major and not continue, students who double major and stay longer than 4 years, more students than they expected accepted admission offers the prior year so they accept fewer the next year, etc. you get the idea.
In any given year you may be able to get some idea of how many cellists a certain school expects to accept and how many applicants they usually get to get a vague idea of the acceptance rate.
Some of the conservatories such as CIM and Julliard with a relatively larger cello faculty may accept generally the same number each year but at schools with only one or two professors for an instrument it seems to fluctuate year to year. This is just my opinion based on my S’s experience within his studio during undergrad, others may have additional information.
Based on my S’s experience I think it is a bit more difficult to assess safe, likely and reach schools for music performance but you may want to consult your private teacher and try to take some lessons at some likely schools to get a sense of where you would fit in. Good luck!
