My college path- confusion, ADVICE?

I am an upcoming senior and freaking out about the college enrollment process. I do not have a solid plan on what I would like to do, but my interests include:
-Education (Secondary, undecided whether English or Math)
-Community Organization and Advocacy
-International Relations
-African American Studies

What do you think about these choices? I guess they are possible majors I am interested in, which brings me to my next question...

If I were to major in, say, Community Organization and Advocacy, could I minor in Education, work as an advocate for a while and then go back to teaching? Or would I have to do more in order to start teaching.

Any advice would be much appreciated!! Some background:
-3.59 GPA (Weighted, I guess?)

Honors classes include:

-Honors English 9

-Honors English 10
-Honors Geometry

-Honors Spanish 3

-Honors English 11
-Honors Algebra

-Honors Spanish 4

-AP English 12
-Honors Pre-Calc
-Honors Spanish 5
-Honors Physics

Extracurriculars:
-Ski Club (9, 10)
-Ski Team (11, 12)
-Tennis (10, 11, 12)
-Key Club (9,10)
-Adventure Club (11,12)
-National Honors Society
-Secretary at a Learning Center (2 years)
-Volunteer at Farmers Market
-(additional volunteer opportunities from NHS)

SAT Scores:
-560 Reading
-530 Math
-570 Writing
(Bad I know, but I will retake them)

Also, any recommended colleges, preferably in the North-East region of the US :)

THANK YOU!

A minor in Education typically will not include the necessary courses and student teaching to permit you to become a teacher without further training. Of course there many be exceptions, and you’d need to research each college individually.

Have you actually found a Community Organization and Advocacy major somewhere?

Many (most?) people start college with undeclared majors so they can find what they like and do well at. A major question you need to investigate is what can your family afford for college. OOS and private schools are very expensive.
