I'm currently in the process of selecting classes for my senior year. Since I have excelled in the history and social science department i have my choice of the following APs but can only choose two (all are full year courses)

AP Art History
AP Psychology
AP Economics (both Macro and Micro)
AP Govt. (US)

I hear that all of these (except Art History) are easy to self-study for. I am 98% sure I am taking Art History but I don't want to take a class that I can just self-study for. Which other class do you think selective colleges will see me as challenging myself in? My gut feeling tells me it's Econ (mainly beacuse it prepares for two tests).

It is of note that I am not required to take the second AP and may possibly also take AP Spanish Lit (If I am accepted) in that class slot.
