Need super easy recipes for small kids please

I know quesadillas have been mentioned, but sometimes I made them the really easy way - tortilla/cheese/tortilla and into the microwave. They aren’t crispy but sometimes kids preferred them that way.
Something my kids liked as a treat was tortilla chips with melted cheese. Sorry if all of this has been mentioned already.
Good luck with the kids, and my heart goes out to the family.

They claim there is turbulence (coulda fooled me- smoothe sailing!) so we have had no food or drink service. I could use that mimosa :woman_shrugging:

Still waiting…. We think the pilot forgot he hasn’t turned off the seatbelt sign and surely the flight attendants are not bothered by this :slight_smile: people are walking to the restrooms and no one is saying anything on the intercom.

We just landed. Have been told to go to younger son’s home first as there is a lot going on at older son’s. Oh, and all the mealtrain food is being delivered to older sons for his wife to take to her sister, who had been at the hospital with her son (am guessing the older sister is with her dad) so they are awash in food! (Fixed the weird autocorrects)

One thing my kids and their friends lived were pizza sitcks - and they can help make them.

  • Take a mozzarella cheese stick (maybe break in 1/2)
  • Roll up in a Pillsbury-type crescent roll
  • Bake
  • Dip in pizza sauce

Easy favs for my picky eaters were:

  • grilled cheese
  • pancakes
  • pasta
  • sloppy joes
  • eggs

Easy peasy to keep in freezer:

  • french toast stick
  • mini pancakes
  • chicken nuggets
  • mini pizza

Sooo… the fridge is packed with leftovers from meals that have been dropped by bye they asked for gaspacho and to make banana bread with leftover bananas. Will try to find an easy recipe- anyone have one or both handy?

Here is my banana bread recipe - use this, follow instructions on package, and add 1/2 cup chocolate chips

Here is my Gazpacho recipe:

½ lb. onions, peeled and quartered

6 tomatoes, peeled and quartered

½ cup red wine

2 ½ Tablespoons olive oil

1 Tablespoon paprika

1 clove garlic

I cucumber, peeled, quartered and thinly sliced

12 black olives, pitted and sliced (you can buy them that way)

Salt and pepper to taste

Parsley, finely chopped

Croutons

Pour half the onions, tomatoes, and red wine into the blender, cover and “liquefy” until smooth.

Empty into saucepan.

Repeat the process, with the other half, now adding olive oil, paprika and garlic clove.

With all the mixture now in the saucepan, simmer for 10 minutes.

Stir the cucumber and olives into the soup

Add seasonings

Sprinkle the soup with finely chopped parsley and garnish with tiny croutons.

I use the Betty Crocker cookbook banana bread recipe. Here it is. I do not add nuts. But sometimes I do add chocolate chips. Very easy and very tasty.

I make a lot of simple food for GD who is 2.5 yr o,d.
I grill chicken breast with olive oil, salt, Italian seasoning. Add rice or pasta, some veggie. I grill pepper, cauliflower, broccoli for her.
I’ll do the same of salmon or steak.
For breakfast, I do scramble eggs, berries, yogurt, oatmeal.
GD also loves pasta and pizza for lunch.
She also likes a lot Asian food, Japanese, Chinese and Thai

Lots of changing plans with so many moving pieces. We ended up at younger s’s today with the kids for some pool time and ordered pizzas. For dinner they had ramen noodles and raw veggies (parents recommendation) and granddaughter decided she’d rather make gazpacho than banana bread, pivoting to planning banana pancakes in the morning, and then proudly pulled out the “sweet treats” cookbook from the set I sent a while ago. We bought the ingredients for the gazpacho and the item she decided we needed to make:
