So I'm really interested in the brain and whatnot and am leaning toward becoming a psychiatrist, however, everyone tells me that majoring in psychology is a major cop-out and that psychology programs are generally not very challenging (in essence, I've been told that it's a catch-all major). So, I thought that maybe I could major in neuroscience instead? What do you think?

Don't avoid majoring in something that interests you because some people think that it's a cop-out, follow your interests. I think you'll find that >95% of people who become psychiatrists major in (surprise) psychology.

believe me, some extremely bright and successful people are/were psych majors.
major in what you want. you will find that there will be some overlap with courses between the two majors
