"New and compelling information" for Appeal

Hi, I was looking at some past threads but I am still a little confused.

I was rejected last Friday (2320 SAT/4.0 UW GPA/6 AP scores of 5) and was ultimately a bit disappointed and a little surprised. Though with the admission rates dropping, perhaps I shouldn't have too surprised.

Is the appeal physically supposed to be in the format of a letter? As Dear Sir/Madam (or Kirk Brennan).

Also, what counts as new and compelling information? I was announced as a Presidential Scholar candidate (as well as a NMF) and participated in a state wide piano competition as a finalist. Furthermore, I have continued doing research and just heard back from a different professor asking me to work for her again this summer. How do I incorporate this information without it sounding like a laundry list of achievements?

Or instead of stating this, should on concentrate on why USC would be a good fit for me?

Thanks! Any advice or link to a different thread would be great!
