I am having trouble coming up with a GE to fulfill my science theme course requirement (I'm in thematic option). Can anyone recommend a good course to take that won't get too technical? I'm okay at math, but not good at science.

Well, if you're not really a science person, then you WON'T like CHEM-105 or BISC-120 (Biology-120). Those classes are what starting premeds usually take, and I think the average in BISC-120 might be around a C+ and the average in CHEM-105, maybe a B- or so. I'm not too sure about the rest. I'll be taking GEOL-240 this upcoming fall semester, but I don't know too much about it.

I have taken Chem 105 and Phy 151. Chem is hard for ppl who don't have chem background. I have seen a good number of premed ppl struggle in that class. But I don't think the class is difficult. I got A in that class. For Phy 151, it is a weed out course for engineering students. Don't consider taking that class at all. I got B+ and I am an engineering student.

I think that usc allows its students take one GE as pass/ no pass

i took Phys 151 as an engineer...and of all the classes i've ever taken (maybe with the exception of Calc II with Lototsky, also at USC), i'd say it's one of the hardest...i pulled an A in both, but not without long nights and at least an interest in the material we were learning. so definitely avoid that. and as mentioned, Chem 105 is a premed/engineering class...i tested out of it, but it seemed like a challenge to my many friends to took it.

i also hear that Astronomy 100 can be an easy class, as long as you attend lectures/tests and labs, both of which are interesting and easy. Kinesiology also seemed to be one of the more interesting and less demanding.
