Can anyone tell me the process to follow if an accepted/committed student decides they don’t want to take an AP exam that they told the college they were taking?
College in question is an Ivy – it doesn’t give credit for the class, only placement, and that particular class is unlikely to be part of my kid’s major or future interests.

Did the admission letter specify that taking the AP exam is a condition of admission?
In any case, contacting the school directly if there are any questions is more likely to give the answer than any general guesses found here.
Have your child contact their local admissions offer! That’s what I did (also ivy) and it worked out fine)

You only get placement if you get the score they determine. This is just as you didn’t get the score. It won’t impact anything.
