I’m not much for camping but would be tempted for a place that has horseback riding, arts and crafts, and archery. A lazy river would be a bonus! I went to a dude ranch somewhere near Durango in my early twenties with a friend.
These aren’t adult only but some of them have kids programs to keep them away from you ;).

The John C Campbell folk school in western North Carolina teaches traditional hand crafts, cooking, photography, weaving, blacksmithing, etc…in weekend sessions and weeklong stays. Cabins and meals provided , it was like summer camp for grownups! We even had a show-and-tell session before everyone departs, to see what other people had learned/made. Had a wonderful time but it is not cheap! (We did a weekend session for a milestone anniversary)
Not exactly what you’re asking for, but one of my favorite vacations ever was a week at the Chautauqua Institute. I called it “camp for adults” but it does have programming for families, and in addition to the recreational activities, its appeal for me is the programming of the arts (music, dance, visual), the featured speakers/authors, the faith element, and the setting on a beautiful lake.
I loved summer camp! I always went overnight for a month then to day camp for another month. My friends are owners of an overnight camp in the Adirondacks and they have a Family Camp week at the end of the summer. It is not adult only but I thought I’d throw it in here in case anybody with younger kids was looking. Looks like a lot of fun.
Yes, it definitely is also a case of activity match. Do I want to horseback ride or do archery or learn hand crafts? Likely no. Do I want lots of unskilled outdoor activities (water sports, hiking, nature walks), food related activities (decent dining hall, cooking classes), educational element? Yes.
A weekend at Norwich Inn and Spa, or Canyon Ranch is as close to camping as I would like. But these other options posted sound like fun for those who really long for an overnight camp experience like they had as kids.
I am doing a week of French cooking in France with a group of girlfriends this year. It’s going to be about food shopping, prepping, eating, drinking and castle hopping. I am told we are limited to 2 glasses of wine per meal. My sister said that we could supplement.
I am sure there will be some late night girl bonding. One of our girlfriends will be finishing up with her radiation treatments before the trip.
I have thought it would be interesting to do few weeks of college camp- stay on campus, hear some interesting lectures/seminars, go to music concerts or plays. Colleges have summer camps for students, why not have them for adults.
Did one for a veteran’s housing project with my BFF several years ago. We painted the inside of the garage and 2 kids rooms. We felt very accomplished and still talk about it with pride.

I have a friend on the east coast who goes to family activity “camp” each year (at least he used to). I don’t know what it’s called, but I know they had activities for the kids, and he and his wife did a fair amount of sailing (possibly with kids for some of the time).
Camp Pendalouan on Big Blue Lake near Montague, Michigan has a Women’s Adventure Weekend usually in September. Rustic cabins, meals included, activities as many or as few as you want to choose. Lake probably not warm enough for swimming, but canoes, kayaks, paddle boards. Our kids went here for years, youngest was water front director this past summer at age 23, started as a camper at 6.
