I know that med schools do not look at your undergraduate institution necessarily, but would it be better to go to a less competitive school for undergrad in order to get a potentially better GPA and at the same time have potentially more time to improve your resume extracurricularly?

Don’t be too overconfident when calling other schools less competitive, unless you are truly superior to the majority of students. Once you get to college, everything is reset, and those kids who didn’t do so well in HS may excel in college.

To answer your question, rather than going for a less competitive school, go where you feel you will thrive. Yes, medical schools really look at GPA and MCAT scores. But make sure the school you are looking at has decent MCAT scores or else attending that less competitive school isn’t going to be of much help.
