Hypothetically, if I apply to Princeton and have written my own book, would it be bad for the essay that says “4. Using a favorite quotation from an essay or book you have read in the last three years as a starting point, tell us about an event or experience that helped you define one of your values or changed how you approach the world. Please write the quotation, title and author at the beginning of your essay.” to use a quote from my own book?

I wouldn’t. What’s implicit in the question prompt is of the work by someone else (other than you), and hence it states, “you have read,” not what you “have written.”

Secondly, you need to think about what kind of impression you’re bringing to the adcom by citing your own work.

Thirdly, you can highlight the book you’ve written in one of your other essays and on the list of your accomplishments, so why risk unnecessarily?
