Question about # of ap's taken out of # offered

I've read that colleges see your school's profile when you apply, meaning that they'll know how many AP's were offered compared to the number you took. My question is: Do they also see which courses were offered? I'll have taken 10 out of 18, but there are a few (AP Art History, AP Studio Art, AP music Theory) that I've heard aren't very highly valued ap's. I want to know if they take into account what specific courses were available, not just the number. Let me know if this makes any sense and thanks for any help!

My GC told me that when they look at # of APs taken vs offered, they arent going to be like “Oh, his school offers 18 APs, but he only took 10…BAD!” They look at your schedule in comparison with what the most rigorous courseload available is. For example, my friend took 5 APs this year, but I only took 4, because he took AP Spanish and I took Honors Chinese, because there was no AP Chinese class, so admissions people cant hold that against me. On the other hand, if you choose to take CP US History instead of Honors or AP, that would be seen as not taking the most rigorous schedule available, and may count against you at a super-top tier uni.

I know that at my school, it simply wouldn’t have been possible to take all the AP classes offered. It’s definitely dependent on the situation, and other classes available. I assume colleges consider the context of your school’s curriculum.
