For schools that don't accept score choice, but only want 2 subject tests:
If I took, let's say, Lit, History, and Math, and only wanted to send Lit and History, would I have to send Math as well?

Someone correct me if this has changed, but in prior years score choice only allowed a student to choose to send or not send scores from particular test dates. If you took all three subject tests in one sitting, I don’t believe score choice would allow you to send less than all.

No. When you order scores with score choice, you check the subjects individually not by date. Only SAT1 is by date.

OK, I stand corrected. But, in any event the questions seems to relate to schools that don’t allow score choice. Those schools do indeed want to see all test results and applicants shouldn’t use score choice even for subject tests. However, as a practical matter, schools rely on student honesty if they have a no-score-choice policy as they have no direct way to verify whether score choice was used.

Even for schools that request all scores, they may still allow score choice for subject tests (e.g. Stanford). You should check each school for the details.
