The school has gotten me interested however, I have a few questions about it
1. They seem to be very focused on their geological/ mining/ petroleum programs- do they focus most of their energy towards those programs or do all programs get a good amount of attention and resources
2. How much time is spent on school work in an average week (it would be torture to spend all day doing schoolwork with nice weather and the rocky mountains being right in front)
3. how do employers see/value the school's grads

Every college’s goal to be great at all their programs to be as competitive to the work force as possible and CSOM is no different.
It is just as demanding as any STEM program can be. So with or without the weather, your education demands come first. While on break or summers, you can enjoy the environment as much as you want.
Employees recruitment and Value for the education are two different things.According to the ranking, the school does well on both ends, but for OOS applicants, it sometimes is not worth the cost especially when you have viable option with in your home state.

Best of luck to you.

SD and NM also have small engineering and mining focused schools with lower prices than the CO one. MO also has a small engineering school.
