I haven’t really personally known any of the teachers in hard classes (AP)
for the past two years. But I’ve gotten friendly with my Spanish II teacher
who I am sure will write me some great recommendation letters.
So my question is, is it better to risk sending a good rec letter from a teacher of an “easier class” than sending a so-so rec letter from a teacher
of an AP class?

For some reason that seems so strange. At my school, teachers who teach AP recieve the same bonus as if you coach a sport, so there are ALWAYS AP study groups going. When we get towards May I see my AP teachers more than my parents.

The teacher will hopefully judge you within the context of the classroom. If the class was easy for you, fine; it was easy for 20 of your fellow peers as well, most likely. If you connect well with that teacher and had him or her within the last two years of high school, I'd say go for it.

But watch out for foreign langauge prof recs. Some colleges require eng/social teacher recs (personally learned the hard way).
