I am wondering what would be a sensible load of subjects for MIT and/or Ivy League colleges, I am a science student, so I am planning to take, Chem, physics, bio and math, however, some colleges would like to see humanities and English, does that mean I should take humanities and English in A-levels too, furthermore, how do these units view subjects like Information technology, further mathematics ?

Take 3-4 you feel confident you can get A/A* in.
Maths+ Further maths would be expected for MIT, “just” Maths otherwise.
Physics or chemistry definitely.
CS/IT or biology are fine but not necessary.
Yes, a Humanities or social science subject should be included if possible, English, Philosophy, History, Economics…
Maths, further maths, CS, Philosophy would be a potential combination (cyberethics, etc).
Maths, further maths, physics, it, media studies is another combination.
Maths, physics, chemistry + one in Humanities gets you covered for the UK and and the us.
Psychology would be a good addition
