Rigor of Classes

So I am a sophomore and very stressed about classes.
Next year I am planning on taking GT AP English, APUSH, AP stats, Spanish III, Choir, double blocked Clinical Health Science, and Interior design.
Apparently I have a very high chance of getting into the advanced choir, which is double blocked. I do not think I have the space because I feel like I need to take Spanish III, but if I take the advanced choir im worried that I will be taking a very light junior year.
I’m also worried about moving physics to senior year because I don’t want colleges thinking I skipped (health science doesn’t count as a science credit- go figure).
The colleges I’m interested in include U Miami, U Florida, FSU, and other major Florida schools.
Senior year I’m looking at GT AP English IV, Anatomy and Physiology, AP Gov, PE, Choir double blocked, AP Macro/AP Micro, and Physics.

Is taking 5 credits worth of electives in junior year going to hurt me? Should I take Spanish III (the class is not my forte), and is moving physics to senior year ok?

I can have a total of 8 credits each year, btw.
