I got an 8/8/8 on my new SAT essay, although I’m not entirely sure colleges care. Do the top colleges consider the essay score? If so, how important is it?

It depends on the school, if they require essay, they may want it to demonstrate you have adequate writing ability for college level or they may compare it to application essays for consistency. If they don’t require essay, they likely don’t consider it. Most will tell you the essay component of the score is least important out of the SAT scores.
That will surely benefit your profile even if they do not consider it
