okay so I know that it's not very impressive to get a high score on a language test if it's your native language. I signed up for the Japanese listening test, and although I am somewhat fluent, I've never studied it in school and I've never lived in Japan. English was my first language, and the only reason I can speak Japanese is because it's my mother's native language and I slowly learned to speak/understand it as I got older. I had to teach myself how to read and write in the language (and honestly I still have a long way to go) so I am obviously not at the level of a "native speaker", but I am confident I can score high on the test. I want to show them that I am a "home grown bilingual", but considering I never took it in school, will admissions assume that I am a native speaker?

No, but they will correctly assess that you are a heritage speaker. The same caveats apply for both native and heritage speakers regarding the SAT foreign language subject tests.
