I'm doing Math IIC, Chem, and US Hist (US just so I have a 3rd SAT II to make me look well rounded, I'm a prospective engineering major). So far I'm using McGraw Hill for Chem and Math (4 and 9 practice tests in each respectively, with detailed coverage for every topic). If I were you, I'd also use the official SAT II book to test my knowledge on an actual official SAT II test once done reviewing with McGraw Hill (if you use them). I'm leaning to Hill or PR for US History, but it's easier for me because I finished a year of it and took the AP exam (4).

Hmmm, well I didn't think chem was too bad, but I did just take the AP test, though granted everything I knew was self-studied so that's a possible route. Hmmm, though you could just take a prep book and pick up most of the stuff, b/c I just did AP US history and I think MC is what boosted my score so... But yeah I totally agree that you should attempt to have a third test that is english/history/foreign language [lots to pick from] that you will definitely come across as a well rounded student, at least that's what I think when I did IIc, chem, and spanish, but yeah so just take whatever subject you feel you could do best on, and yeah... and don't worry I know exactly where you're coming from from being a math/science person so good luck with that :)
