Senior Schedule Choices question (among others)

Hello, I am a junior from Georgia, and I attend a private (non-parochial) school. Im having some difficulty deciding on my senior schedule. Thus far I have achieved around a 4.0 or so, a 30 on the ACT (32 sci, 32 reading, 30 eng, 26 math) and a 1970 on the SAT (720 cr, 630 math, 620 writing). I am a three sport athlete, the student body Vice-President, among other engagements.

Thus far I have taken the basic underclassmen requirements (the most rigorous available to me) my 9th and 10th grade year (in which I also took AP World and scored a five). This year I'm taking the following:
AP US History- favorite class as well as my best (High A)
AP Biology- my hardest class though I usually manage a high B low A
AP English Language and Composition- I also enjoy this class and end the quarter with an A
PreCalculus honors- this class is alight (middle to low A)
French III honors- I'm good at French but the teacher is difficult (low A)
I am also going to take the AP european history exam without the class

I am planning on applying to good schools ranging from College of Charleston as a safety, UGA and Sewanee as a targets, and Bowdoin and Emory as my reaches. I plan on taking the following:
AP English Lit- I like the humanities (history, literature, philosophy) in general
AP Calculus- I think I may like the more theoretical and philosophical parts of this branch
AP French- Ive taken three years why not a fourth
Econ/Gov- senior requirements a semester each
Speech/adv comp- same as previous
Free time- a study hall type period for homework (a huge stress saver)

The problem rests with my plan to take AP chemistry, the teacher who was brilliant is leaving and the other chem teacher I don't care for. I have considered changing, which would give me a chance to take an extra class (chem is a double block). My best options
are as follows:
AP Chemistry- I took chemistry as a soph and I could just stick it out with the new teacher
Or any combination of these
AP statistics- this might be interesting
AP physics- insanely difficult (so I've heard) but impressive
AP environmental science- supposedly easy yet inexpressive
Psychology- not offered as an AP but I'd take the exam, yet this is a pretty easy class

My plans are to major in history while fulfilling premed requirements, and then make a choice of whether to go to med school or continue to an advanced degree in history (preferably a phd I'd like to work at the postsecondary level if preferably) as a figure out my goals in life further.

This has become quite a long question, and in short I'd like those with the patience to read this to comment on my admissions profile in general, my schedule, and especially the aforementioned choice.

My thanks to any who respond.

AP Physics… In all honesty, I would say it is my favorite natural science subject disregarding the fact that I am not doing so great with it. I like it better than Chem or Bio.

Chemistry is the most important science from a pre-med perspective.

Note, however, that medical schools generally do not accept AP credit against pre-med course requirements. You may want to ask on the pre-med forum about this. But AP chemistry should be stronger preparation for university level chemistry than regular high school chemistry.

Is AP physics B or C? C is the calculus-based version, which is more worthwhile than the non-calculus-based version.

Have you had an earlier physics course? You will need to complete some physics for a college pre-med program. I understand the AP Physics might be grueling, but it would certainly show rigor in your curriculum.

The AP Chem would also be sufficient for rigor (and great prep for colege chem). If you are OK with first exposure to Physics in college (and maybe you can find a physics for pre-meds), then go for the Chem AP. Good luck!

Thanks for everyones advice, I ended up taking AP stats, AP enviro sci, AP calculus, AP literature, AP French, Econ/gov, speech/comp, and free time
