Senior year schedule question

I am going into my senior year in high school. I am currently planning on doing the executive internship program at my school through the local community college. I get to be a professional intern with the company of my choice. In order to do this, I must have the last two periods of the day free, which is causing some trouble in my schedule. If I have more than enough credits in math (5 so far because of middle school credits), is it okay to not take math senior year? What about science? I have 4.5 science credits. I am planning on applying to the University of Florida, which is hard to get into. I have a 3.25 unweighted/4.0 weighted GPA, tons of extracurricular activities, SAT - Critical Reading:560, Math:600, Writing:600; ACT - Reading:26, Math:26, English:33, Science:26, and I have taken 4 AP classes so far (Art History, English Language, United States History, Statistics). Due to scheduling conflicts, in order to take the AP classes I want this year (Macroeconomics, English Literature, Psychology), I might have to not take math or science. What do you think I should do? Skip the internship and take more AP classes? The internship is a great program and you can keep it on your resume throughout college and beyond because it is truly a professional internship. Thanks for your help!
