This is definitely a rigorous schedule! Good luck with this! It seems very challenging.
About adding AP European History or Psychology; pick the one you enjoy more. However, check with your school what the graduation requirements are. I know some places want people to take World/European History at some point in high school. If you have never taken a world or/and European history course, I would strongly recommend AP European History. Otherwise, it comes down to which you prefer. Personally, I prefer Psychology, but this varies by person, and you can’t go wrong with either.
I also forgot to mention (this is why it is edited), taking AP Environmental Science is completely fine, but if you want to apply to a top public school, private school, or Ivy League school, I strongly recommend you have at least a year of bio, chem, and physics. If you have at least a year in each section, feel free to take AP Environmental Science. Otherwise, I recommend you take a course in bio, chem, or physics, whichever one you’re missing.

Hey! I am taking AP European History this year as a sophomore. Let me tell you… It is legitimately horrible. I have a 91% and it was an absolute struggle to get that grade. I am also taking AP Psychology this year (ironic) and it’s extremely easy, I got an A+ first semester and I study for the tests the night before. My school is extremely competitive, so the classes are not easy. I am going to start studying for the AP exams in March or early April, so I will let you know how that goes. Anyways, I’d recommend AP Psychology if you want a straightforward class and want to be able to dedicate more time towards other AP classes as well. AP Euro is content heavy and requires a lot of studying for the tests, for my school at least.
