I'm a junior this year, taking APUSH, APES, and AP English Comp, along with Physics, Trig, & Spanish. For my senior year, I'm planing to take AP Gov/Econ, AP Calc AB, and AP Lit as my 3 AP classes.

Would it be worth it for me to self study AP Human Geography next year? I do have some interest in the subject, but since it is senior year, will it affect the decisions of admission officers at all?

I think you'll have enough to worry about senior year and the credit for AP Human Geo probably won't really be needed that much..

It really won't make a big difference so I'd just forget about it. Enjoy the end of senior year instead of trying to cram for a ton of AP exams. Not worth it senior year.

Probably won't impress admission officers much, not next to all the actual ap classes you are taking. However, human geo is one of the easiest ap's, so if you can get college credit for it wherever you are going then by all means, self study it.
